I have updated both the IP address and hostname of my Nagios XI installation and would like to generate a new self-signed certificate with these updated certificate details.

Hello. Thank you for your post you can use the following document to generate a new cert - https://assets.nagios.com/downloads/nagiosxi/docs/Configuring-SSL-with-Nagios%20XI.pdf
Note: It's very important that the IP Address / DNS name in Nagios XI > Admin > System Settings >
General is the same as what is typed in the certificate request "common name"
